For whatever reason, it has taken me 2 years to try Colterra in Niwot, just outside of Boulder.  In hindsight, it was a large mistake to wait so long.  I had the pleasure of eating dinner there on Saturday night with my CU Law colleague Brad Bernthal and was very impressed. 

First of all, I’m going to like any restaurant with a good cheese course and these folks will serve cheese as an appetizer or dessert.  (I know of one regular reader of this blog who would probably do cheese courses for both).  We ordered the Ossau Irraty and the Haystack Chevre.  Yummy. 

Appetizers included a wonderfully complex, yet familiar corn chowder and crostini that was baked just right.  Main courses were a super tasty rissotto with scallops and lobster claw and a ahi tuna that seemed like it was San Francisco, not Colorado.

The wine list was diverse and interesting as well.  The two negatives were mosquitos – we tried at first to eat outside and got eaten alive and the service, while competent, lacked a certain warmth that the food clearly exhibited. 

All in all a really nice experience and will try again.
